ABOUT lei Shang
As a Pastry chef, Lei Shang brings his years of culinary and patisserie expertise to the restaurant’s selfless service and hotel functions and canape parties, even bakery projects. Having spent nearly a decade honing his skills in 5 stars international hotel and Michelin- starred restaurants from Beijing to Doha, from Dubai to Sydney.
Fortunate to begin his training in Beijing within a family-oriented and nurturing environment, Lei continued to work under pastry chefs who were great leaders, upholding the mentality that “no job is too small.” Adopting their philosophies and values, Lei is dedicated to running an uplifting pastry kitchen that embraces learning, teaching, leading by example.

Intent on increasing his skill and evolving into a strong pastry chef and leader, Lei traveled across the country in search of experience and hands-on learning. He was honored to serve a pastry sous chef role at Dubai Ritz Carlton Hotel and later spent two years as an Executive Pastry chef for Jonah’s restaurant and ovolo hotel Woolloomooloo. Finally ending up in Mosman Sydney as an Executive Pastry Chef in Bathers Pavilion
